Things to consider before beginning…
Depending on the season, strawberries can be hit or miss. If I’m making these for my family, I am willing to go cheap and buy the carton that has small berries that might not be the brightest or most appealing (being honest here!). If I plan to bring these elsewhere or am entertaining for others at my home, then I will opt for the more expensive, plumper, brighter strawberries. But overall it’s up to you. Choose what meets your needs and your budget.
Chocolate-wise, I know we are all not fans of white chocolate, but this is a necessity here. I like to melt my chocolate in a double boiler. It’s not the fastest, and some of my friends tease me that I am old-fashioned, but I try to be as health-conscious as possible and use the microwave only when needed (like to make extra movie theatre flavored popcorn, yikes). Food coloring is optional, and yes, it’s not healthy…but for holidays and get togethers, I’m always down for a little artificial coloring! If you are totally against it, or just don’t have blue food dye, sprinkles alone work fine. Play around with the different options you find, they will all look amazing!
Ingredients / Things You Need
2 lb strawberries, washed and dried completely. Make sure you keep the stems on!
10oz bag of Ghirardelli White Flavored Wafers or your bag of choice
assortment of sprinkles (or just one kind…I prefer the assortment because I like my strawberries to look different) spread out into different bowls for dipping
1 tbsp coconut oil
a few drops of blue food dye
Stainless Steel Double Boiler Pot (again, you can melt the chocolate in the microwave, if you prefer)
parchment or wax paper
Directions
Line a sheet pan with parchment or wax paper.
Using a double boiler add chocolate wafers and coconut oil at once. Stir often, making sure not to burn the chocolate! (Or you can microwave the wafers and coconut oil at the point. Be sure to mix it about every 30 seconds until desired consistency).
Holding a strawberry by the stem, dip 2/3 of the strawberry into the melted white chocolate, lift and twist slightly, letting the excess chocolate fall back into the bowl. At this point, dip the strawberry 1/3 of the way in your sprinkles of choice and then place the strawberry on the parchment paper. Repeat with the rest of the strawberries.
Chill the strawberries until the chocolate sets, about 15 minutes.
NOTE If you choose to dye some of the chocolate blue, set aside some white chocolate after step 2 and add the food coloring to achieve the blue shade you desire. When dipping into the blue, first dip 2/3 of the strawberry into white chocolate and let his harden a little. Then dip the strawberry only 1/3 way into the blue colored chocolate. Dip into sprinkles or leave as is.
